Super Crunchy Detox Summer Salad
A vibrant, crunchy summer bowl to help you feel light, energised and glowing.
There’s nothing better than a fresh salad eaten outside on a sunny day – and this one ticks all the boxes: colourful, satisfying, full of flavour, and naturally supportive of your body’s detox systems.
It’s packed with cruciferous veg like broccoli and red cabbage to help support liver detox, rich in fibre to aid digestion, and bursting with protein and colour to keep you feeling full and balanced.
It’s low in calories, big on crunch, and completely delicious. Next time I’ll be adding creamy avocado, toasted seeds or nuts for even more texture and nourishment.
This is real-food detox – vibrant, whole, and totally satisfying.
⭐️ Ingredients (Serves 1–2)
½ head broccoli, chopped into small florets
¼ red cabbage, finely shredded
½ red pepper, diced
¼ red onion, thinly sliced
2 medium eggs
2 tbsp fat-free plain yoghurt
1 tsp extra virgin olive oil
Juice of ½ lemon
Sea salt + black pepper to taste
Optional extras:
½ avocado, sliced
1 tbsp pumpkin seeds or sunflower seeds
1 tbsp chopped almonds or walnuts
🥣 Method
Boil the eggs: Place eggs in boiling water for 6–7 minutes for a soft, jammy centre. Once done, rinse under cold water and peel.
Prep the salad: Add the chopped broccoli, red cabbage, red onion, and red pepper to a large bowl. Toss together.
Make the dressing: In a small bowl, whisk together the yoghurt, olive oil, lemon juice, salt and pepper.
Assemble: Drizzle the dressing over your veg and toss to coat evenly.
Top it off: Slice your soft-boiled eggs in half and place them on top. Add any extras like avocado, seeds or nuts for more healthy fats and crunch.
