Glow Bowl: Warming Root Vegetable & Harissa Stew
A vibrant, plant-powered one-pot dish to fuel your day, balance your hormones, and keep you glowing from the inside out.
✨ Ingredients (Serves 4)
1 tbsp olive oil
1 red onion, finely chopped
½ tbsp fresh thyme leaves (or 1 tsp dried)
1–2 tsp harissa paste
1 vegetable stock cube, crumbled (or 1 tsp homemade vegetable stock paste)
600g mixed root vegetables – e.g. carrots, parsnips, swede, sweet potato – peeled & chopped into chunks
400ml water
1 x 400g tin haricot beans, drained and rinsed
½ tsp fine sea salt
¼ tsp ground black pepper
A handful of fresh parsley, roughly chopped
🔥 Method
Sauté your base:
Heat the olive oil in a large pan over medium heat. Add chopped onion and cook for 6–8 mins until soft.Layer the flavour:
Stir in the thyme and harissa paste. Cook for 1–2 mins until fragrant.Build your stew:
Add chopped root vegetables, stock cube or paste, and water. Stir well.Simmer to soften:
Cover and simmer for 15–20 mins until veg are just tender.Add the beans:
Stir in haricot beans, salt, and pepper. Simmer for 5 more mins uncovered.Finish & enjoy:
Scatter with parsley and serve warm.
