Glow Bowl: Warming Root Vegetable & Harissa Stew

A vibrant, plant-powered one-pot dish to fuel your day, balance your hormones, and keep you glowing from the inside out.

✨ Ingredients (Serves 4)

  • 1 tbsp olive oil

  • 1 red onion, finely chopped

  • ½ tbsp fresh thyme leaves (or 1 tsp dried)

  • 1–2 tsp harissa paste

  • 1 vegetable stock cube, crumbled (or 1 tsp homemade vegetable stock paste)

  • 600g mixed root vegetables – e.g. carrots, parsnips, swede, sweet potato – peeled & chopped into chunks

  • 400ml water

  • 1 x 400g tin haricot beans, drained and rinsed

  • ½ tsp fine sea salt

  • ¼ tsp ground black pepper

  • A handful of fresh parsley, roughly chopped

🔥 Method

  1. Sauté your base:
    Heat the olive oil in a large pan over medium heat. Add chopped onion and cook for 6–8 mins until soft.

  2. Layer the flavour:
    Stir in the thyme and harissa paste. Cook for 1–2 mins until fragrant.

  3. Build your stew:
    Add chopped root vegetables, stock cube or paste, and water. Stir well.

  4. Simmer to soften:
    Cover and simmer for 15–20 mins until veg are just tender.

  5. Add the beans:
    Stir in haricot beans, salt, and pepper. Simmer for 5 more mins uncovered.

  6. Finish & enjoy:
    Scatter with parsley and serve warm.

Want to boost protein? Add crispy grilled halloumi, a dollop of Greek yogurt, or even flaked salmon on top.

Feeling flat? Add a handful of greens in the last 5 minutes – kale, spinach, or cavolo nero work beautifully.
