Chocolate energy slice

Indulge your sweet tooth guilt-free with this nourishing chocolate energy slice! Packed with wholesome ingredients, a great snack for busy days or a little treat when you need an energy boost.

Ingredients:

  • 300g almonds

  • 9 dates (pitted)

  • 2 tbsp cacao powder

  • 2 tbsp peanut butter

  • 1 tsp vanilla extract

  • 2 tbsp honey (or adjust for sweetness)

  • 50g oats

  • A pinch of salt

Optional topping:

  • Sprinkle of cacao powder or crushed almonds for garnish.

Method:

  1. Prepare the almonds:

    • Place the almonds in a food processor and pulse until they form a coarse almond meal. Set aside some larger pieces if you like a crunchier texture.

  2. Blend the dates:

    • Add the pitted dates to the food processor and blend until a sticky paste forms. If the dates are dry, soak them in warm water for 10 minutes, then drain before blending.

  3. Mix the wet ingredients:

    • Add the peanut butter, honey, and vanilla extract to the food processor and blend with the date paste until well combined.

  4. Incorporate dry ingredients:

    • Add the almond meal, cacao powder, oats, and a pinch of salt. Blend until the mixture is evenly combined and starts to stick together.

  5. Adjust the texture:

    • Check if the mixture holds when pressed. If it’s too crumbly, add a teaspoon of water at a time. If it’s too sticky, add a bit more oats.

  6. Shape the slice:

    • Line a square dish or tray with baking paper. Press the mixture firmly into the tray using the back of a spoon or your hands to create an even layer.

  7. Chill and cut:

    • Place in the fridge for 1-2 hours until firm. Once set, cut into squares or slices.

  8. Optional garnish:

    • Dust with cacao powder or sprinkle with crushed almonds for a polished finish.

Storage:

  • Keep in an airtight container in the fridge for up to a week or freeze for longer-lasting treats.
